Meal Ideas for Less than $2 per Serving

While most Americans spend a good portion of their income on food, there are many who prepare delicious family dinners that won’t break the bank.  Let’s take a look at a few items and recipes that are $2 or less per serving:

Sausages with Warm Potato Salad:

This great meal comes in at $1.69 per serving.

1 1/2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh parsley
1 teaspoon white wine vinegar
3 tablespoons olive oil
1 shallot, finely chopped
1 1/2 pounds small red potatoes
Salt
4 chicken or pork sausage links (12 oz.)

Texas Stew:

This hearty stew will cost you around $1 per serving!

2 pounds beef tips, cut into 1-inch cubes
1 (14.5 oz.) can Mexican style stewed tomatoes
1 (10.5 oz.) can beef broth, undiluted
1 (8 oz.) jar mild picante sauce
1 (10 oz.) package frozen whole-kernel corn, thawed
3 carrots, cut into 1/2-inch-thick pieces
1 onion, cut into thin wedges
2 garlic cloves, pressed
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 cup water
1/4 cup all-purpose flour
In three to four hours you’ll have a great tasting and inexpensive meal that is sure to warm you up on a cold winter evening.  Complete Recipe

Slow-Cooker Pulled Pork:

This is one of my family’s favorites.  Cost per serving is less than $1.50!

1 (3 lb.) boneless pork shoulder, skin and excess fat removed
1 onion, chopped
1/2 cup low-sodium chicken broth or water
2 cups bottled or homemade barbecue sauce
2 tablespoons mustard
2 tablespoons honey
1 tablespoon soy sauce
Salt and pepper
